My FAVOURITE recipe for the silly season

As the silly season is fast approaching, along with warmer weather, sunshine and good times, I thought it would be a great time to share one of my favourite recipes for entertaining with you all – Brown Rice Salad! This recipe is my go-to for any kind of situation where I’m required to make a plate of food– it is vegan, healthy and nutritious, but still packs a punch of flavour! It’s also super easy and quick to make (I almost ALWAYS leave these sorts of things to the last minute!) and you’ll probably have most of the ingredients in your pantry or fridge already. Think taking this along to a barbecue on a warm summers night, or serving it up for your friends at a potluck dinner – I promise you, even the biggest meat-eater will be impressed with this one!

Brown Rice Salad

Ingredients

  • 3 cups brown rice, cooked and cooled
  • 1 avocado, diced
  • 1 cup spinach, chopped
  • 300g tinned mixed beans
  • 1 cup cherry tomatoes
  • 1 cucumber, chopped
  • ¼ cup mixed seeds
  • ½ cup feta (optional)

Dressing

  • ¼ cup oil
  • 4 tbs lemon juice
  • 1 tsp mustard, wholegrain
  • 1 garlic clove crushed
  • 1 tsp chopped basil
  • Salt and pepper to taste

Method

  1. Combine all salad ingredients in a large mixing bowl.
  2. Whisk together dressing ingredients. Pour dressing over salad.
  3. Enjoy!
